Nasi Goreng (Vegan)
Nasi Goreng is the traditional Indonesian fried rice made by stir-frying veggies and rice in earthy flavours, a balance of sweetness and heat. The rice turns dark brown as it caramelises while cooking in sweet soy sauce. You can substitute chilli paste with sriracha or add a tablespoon of tomato-ginger paste. The sauces are easily customisable depending on how deeply sweet/savoury flavoured you prefer. A wholesome dish that you can whip up in less than 20 minutes!
INGREDIENTS:-
- 1 1/2 cup cold cooked rice
- 1 tbsp sesame oil
- 3 spring onions, sliced
- 1 red bell pepper, finely sliced
- 1 carrot, finely chopped into cubes
- 2 shallots (or 1/2 onion)
- 4 cloves garlic, minced
- 1/2 cup bok choy, chopped
- 3 tbsp kechap mania or sweet soy sauce
- 1 tbsp chilli paste (or to taste)
- 1/2 tsp sugar
- 1/2 tsp Apple cider vinegar (or any mild vinegar)
INSTRUCTIONS : –
- 1. Heat oil in a wok over high heat.
- Add the shallots, carrot, bell pepper, garlic, bok choy and spring onion. Sauté for 1 minute or until the vegetables are just tender.
- Bring to a medium heat and add the cold cooked rice and mix gently.
- In a small bowl, make the sauce by stirring together soy sauce, sugar, vinegar and chilli paste.
- Pour the sauce over the rice and mix well.
- Stir-fry on medium- low heat for 2-3 minutes while evenly coating the rice with sauce.
- Transfer the rice to a serving bowl and garnish with spring onions. You can also add a crunchy topping like roasted peanuts, cashews or sesame seeds. Serve alongside rice crackers and slices of cucumber and tomato.
